Zucchini, is the wonder crop. No matter how terrible you are at gardening, the zucchini always seem to grow in abundance.

The problem is… how can we preserve it for future use? I used to cut it up and freeze it. But I don’t like the mushy, watery texture that were the results, when defrosted.
